Veg spring rolls

Ingredients:

Capsicum -1 (slightly chopped)
Grated carrot -1cup
Cabbage -1.5cup
Spring onions – 3 cups
Oil -2tbsp
Soya sauce -1tbsp
Salt as required
Oil for deep fry
Pepper powder -1/2tbsp
Spring roll wrappers -10

For sealing:

Maida -6tbsp
water -4 to 5tbsp you can add if required

Preparation method:


Heat the tawa or kadai on low flame and add 2tbsp oil.
Keep the flmae into medium and add 1/3 spring onions.
Mix and add all the veggies.

Change the flame to high and stir fry the veggies for 4 to 5 min.
The veggies need to have some crunch.
Now add pepper powder, soya sauce mix everything very well. You can adjust the sauce and pepper powder as per your taste.

Season with salt.
Stir very well and filling has to be dry.
Switch off the flame and add 2 to 3tbsp of spring onions.

Stir and keep the mixer aside and let it be cool.

Preparing the sealing paste:

Take a bowl with 6tbsp maida and 4 to 5 tbsp water.
Mix well to make a thick paste with out any lumps.

Preparing veg spring rolls:

Take a wrapper and place it on surface. If you are using spring roll wrapper recipe which I posted it, then keep cooked side facing you.
Before using wrappers they should be at room temperature.
With fingers apply the paste on the edges of the wrapper.
Place 1tbsp of the veggie stuff on one side. If the wrapper big in size the you can add few more tbsp stuffing.
Gently and tightly roll till the end. Seal the end part to the roll and the roll with the sealed side down.
Now apply some paste on edges. Both sides sealed gently by touching roll and apply some paste on the closed side.
Place all the spring rolls in plate with sealed edges down.

Deep frying veg spring rolls:

Heat an oil in frying pan or kadai and gently slid on spring roll. Oil should hot if it not enough, then spring rolls absorb oil and become soggy.
Depending size of pan you can fry with 2 or 3 spring rolls in a shot.
Once they become light golden turn them other side and fry it.

Fry them till they are into golden and crisp. Spring rolls get fried quickly.
Remove the spring roll with slotted spoon.Remove excess oil with kitchen paper towels.
Serve the veg spring rolls hot with sauce.
